Eggplant Pizza
Ingredients
- 1 Medium Eggplant sliced 1/2"thick
- 1 TBSP olive oil
- 1 TSP Dried Basil or 10-12 fresh basil leaves
- 4 TBSP Mozzarella grated
- 3/4 Cup Store bought low sugar marinara
- Salt and Pepper to Taste
Instructions
- Preheat oven to 375 degrees
- Line a large baking sheet with foil
- Place eggplant slices in a single layer
- Drizzle olive oil over each slice
- Roast the eggplant slices for about 25 minutes, or until soft in the center
- On each slice add 1TBSP marinara, then top with basil leaves and cheese. Sprinkle salt and pepper to taste
- Bake eggplant for an additional 6 minutes or until cheese melts.
