Ingredient Spotlight: Sweet Potatoes

Fast Facts-
- These root vegetables are in season from October-March in Kentucky.
- They were first cultivated over 5,000 years ago in Central and South America.
- They are rich in fiber, Vitamin A, Vitamin C, niacin, and potassium.
- Niacin, or Vitamin B6, is needed for energy metabolism and helps keep your brain and blood vessels healthy.
- Sweet potatoes are different from yams, which are lighter, longer, and starchier.
Selection and storage
- Small to medium sized sweet potatoes tend to be sweeter and creamier, while larger sweet potatoes are starchier.
- Store uncooked sweet potatoes in a cool, dry, well ventilated place (not the fridge) for up to 2 weeks.
- Once cooked, they can be stored for 3-5 days in an airtight container in the fridge.

BBQ Chicken Stuffed Sweet Potatoes

Time: Prep 5 mins, Cook 60 mins
Yield: 4 servings (1/2 potato)
Ingredients:
2 medium sweet potatoes
12 oz. shredded chicken—rotisserie chicken is great for this
1/4 cup BBQ sauce
4 Tbsp. red onions—pickled if desired
4 Tbsp. cilantro
Directions:
- Preheat your oven to 400 F.
- Line a baking sheet with parchment paper and wash your sweet potatoes. Poke the sweet potatoes 5-6 times with a fork or sharp knife, place them on the baking sheet and bake for 60 minutes. Depending on the size, you may need to adjust the bake time.
- While the potatoes cook, toss chicken with BBQ sauce.
- When potatoes cooked, cut in half and place 3-4 oz chicken on each half.
- Garnish each half with 1 Tbsp red onions and 1 Tbsp cilantro.
- Enjoy!
